Chunky Gooey Cookie

Ingredients

Scale
  • 120 g plain flour
  • 120 g bread flour
  • 1 egg
  • 1 egg yolk
  • 200 g brown sugar
  • 100 g granulated sugar
  • 150 g butter
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp Vanilla extract
  • 150 g chocolate chips
  • 100 g Walnuts

Instructions

  1. Mix the butter, brown sugar, granulated sugar together until creamy
  2. Add the egg, egg yolk, and vanilla extract to the mix
  3. In a separate bowl, mix the dry ingredients together: bread flour, white flour, baking soda, baking powder, salt. Then add to the butter/sugar/egg mixture. Mix until the dough is smooth.
  4. Add the chocolate chip and (pre-roasted) crushed walnuts (or any other ingredients you’d like e.g pistachio, raisins, etc). Mix until everything is well combined.
  5. Scoop out the cookie dough onto a tray lined with baking paper into large dough balls (I used a large sized ice cream scoop for this)
  6. Refrigerate and let the dough rest for at least 30 min. At this point you can also freeze the dough if you want to use it much later on.
  7. Pre-heat the oven to 180 degrees C (I use fan mode)
  8. Place the dough balls on to a lined baking tray, make sure there’s quite a lot of space between each of them (I’d say at least 8cm)
  9. Bake the cookies in the oven for 14-20 minutes until they have a nice golden shine ☀️
  10. Take them out of the oven and leave them to rest for at least 15mins. (Or you can be cheeky and scoop it out with a spoon at this point – they’re piping hot and super gooey right out if the oven)
  11. ENJOY 🍪🥛
