Salt & Pepper Chicken Wings

  • 500g chicken
  • 1 tsp salt
  • 1/2 tsp pepper + some more for stir fry
  • 1 tbsp Shaoxing cooking wine
  • 8 garlic cloves (1/2 for marinade, 1/2 for stir fry)
  • 2 spring onions
  • 1/4 onion
  • 1/2 red chilli
  • 1 cup potato starch


  1. Marinate the wings with salt, pepper, minced garlic and a bit of cooking wine then leave it to rest for at least half an hour
  2. While waiting for the meat to marinate, chop some onions and chillies
  3. Generously cover the wings with some potato starch, this is what’s going to make them super crispy.
  4. Prepare your pan for deep frying, add in some oil and once it’s bubbling, add your wings in one by one.
  5. Deep fry for about 7-10 minutes until they become golden

  6. In a separate pan, lightly stir fry the chopped chilli, the white part of the spring onions, and some extra minced garlic
  7. Add in the chicken, the green part of the spring onions, a bit more pepper and toss everything together until it’s well combined
