Salt & Pepper Chicken Wings

Ingredients
  

  • 500 g chicken
  • 1 tsp salt
  • 1/2 tsp pepper + some more for stir fry
  • 1 tbsp Shaoxing cooking wine
  • 8 garlic cloves 1/2 for marinade, 1/2 for stir fry
  • 2 spring onions
  • 1/4 onion
  • 1/2 red chilli
  • 1 cup potato starch

Instructions
 

  • Marinate the wings with salt, pepper, minced garlic and a bit of cooking wine then leave it to rest for at least half an hour
  • While waiting for the meat to marinate, chop some onions and chillies
  • Generously cover the wings with some potato starch, this is what’s going to make them super crispy.
  • Prepare your pan for deep frying, add in some oil and once it’s bubbling, add your wings in one by one.
  • Deep fry for about 7-10 minutes until they become golden
  • In a separate pan, lightly stir fry the chopped chilli, the white part of the spring onions, and some extra minced garlic
  • Add in the chicken, the green part of the spring onions, a bit more pepper and toss everything together until it’s well combined
