Happy holidays everyone! I tried to make a glass gingerbread house (or greenhouse?) from scratch this Christmas. This took me 3 days, from drafting the template, making the dough, baking the cookies to assembling them and decorating. But realistically, a few hours would be enough 🙂
Here’s the dimension of the pattern that I used. The gelatin sheets that I used were approx 8x12cm so I left about 0.5cm for the borders (which will expand as you bake)
Gingerbread dough ingredients:
- 200 butter
- 200g molasses sugar
- 5 tbsp golden syrup
- 2 eggs
- 650 g flour
- 1/2 tbsp cinnamon (4.5g)
- 1 tablespoon ground ginger (9g)
- 1 tsp baking soda (4g)
- 1/2 tsp salt (2g)
Royal Icing:
- 2 Egg whites
- 1/2 tsp cream of tartar
- 500g icing sugar

Hi Mai
Love your gelatin window gingerbread house.
In your template can you share a few of the missing dimensions? I’m super excited to make this tomorrow.
Thank you for your expertise.
