My foolproof recipe for super easy, super satisfying chunky cookies! Crispy on the outside, gooey on the inside. Always a sure hit!
Chunky Gooey Cookie
Ingredients
- 120 g plain flour
- 120 g bread flour
- 1 egg
- 1 egg yolk
- 200 g brown sugar
- 100 g granulated sugar
- 150 g butter
- 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1 tsp Vanilla extract
- 150 g chocolate chips
- 100 g Walnuts
Instructions
- Mix the butter, brown sugar, granulated sugar together until creamy
- Add the egg, egg yolk, and vanilla extract to the mix
- In a separate bowl, mix the dry ingredients together: bread flour, white flour, baking soda, baking powder, salt. Then add to the butter/sugar/egg mixture. Mix until the dough is smooth.
- Add the chocolate chip and (pre-roasted) crushed walnuts (or any other ingredients you’d like e.g pistachio, raisins, etc). Mix until everything is well combined.
- Scoop out the cookie dough onto a tray lined with baking paper into large dough balls (I used a large sized ice cream scoop for this)
- Refrigerate and let the dough rest for at least 30 min. At this point you can also freeze the dough if you want to use it much later on.
- Pre-heat the oven to 180 degrees C (I use fan mode)
- Place the dough balls on to a lined baking tray, make sure there’s quite a lot of space between each of them (I’d say at least 8cm)
- Bake the cookies in the oven for 14-20 minutes until they have a nice golden shine ☀️
- Take them out of the oven and leave them to rest for at least 15mins. (Or you can be cheeky and scoop it out with a spoon at this point – they’re piping hot and super gooey right out if the oven)
- ENJOY 🍪🥛
