Miffy Tiramisu for Sunday’s birthday party 🎂🐰 My friend organised a Miffy themed birthday party for her pet rabbit this weekend so I made this tiramisu for the occasion 🎉 — Ingredients: - 4 eggs, separated into yolks and whites - 100g sugar, divided into 2 portions - 500g mascarpone cheese - 30 lady finger biscuits - Espresso to dip the biscuits - Cocoa powder for topping Steps: - In a bowl mix the egg yolks and sugar until light and fluffy, add the mascarpone and mix until well combined - In a separate bowl mix the sugar and egg whites until you reach stiff peaks - Gently fold the 2 mixtures together until well combined - Soak the lady fingers into espresso and place a layer at the bottom of a deep dish. Cover with a layer of cream, then another layer of soaked biscuits and finish with a final layer of cream. ( Use a cake scraper or spatula to even out the layer) - Cut out a Miffy stencil, place on top of the tiramisu and sprinkle cocoa powder over it. #miffy #tiramisu #dessert

Working from home lunch: Oyakodon - Japanese chick Working from home lunch: Oyakodon - Japanese chicken & egg rice bowl Starting this mini series to sharing with you guys some candid snapshots of what I actually eat throughout the week when I’m home and not baking. While I LIVE FOR elaborate dinner parties, I’m actually a pretty lazy cook if it’s just for myself - especially during the work day where I tend to try and whip up something super quick so that I can return to whatever else I was doing! 😅 Today I made Oyakodon which is a chicken and egg rice bowl. Since I always have some chicken and onions in the house, it’s one of my go to when I have no idea what to cook. I usually top this with leftover rice, so it only takes me about 15-20 minutes to prepare and cook everything 😋 OYAKODON RECIPE: Ingredients: - 1 Onion - 2 chicken thigh fillets - 2 eggs - 150 ml dashi (I used dry sachet and mixed it with water) - 1 tbsp soy sauce - 1 tbsp mirin - 2 tsp sugar - 1 bowl of steamed rice - Spring onions sesame seeds Steps: 1. Cook the chicken in the broth mixture until done, add the onions until they soften (5-8 mins) 2. Pour the beaten eggs and cook for about a further minute 3. PARIS OLYMPIC VILLAGE MUFFINS RECIPE 🍫🏅 The PARIS OLYMPIC VILLAGE MUFFINS RECIPE 🍫🏅 The Olympics this year was so fun to watch! One of my favourite viral / meme (on the clock app) was the muffin man - here’s my version of the famous chocolate muffins that got everyone in the Olympic Village talking 👀 INGREDIENTS: Muffin Batter (makes 12) 300 g All-purpose flour 50 g Dutch-processed cocoa powder 120 g Unsalted butter softened 1 tsp Vanilla extract 1 tsp Baking soda 1/2 tsp Salt 2 Eggs at room temperature 300 ml Buttermilk 300 g Brown sugar (I have a 50:50 brown and white sugar mix in the video because I ran out of ingredients!) Chocolate chunks amount as desired (I used a mix of milk and dark chocolate) 👉🏻 Mix all the ingredients. Bake in the preheated oven at 200°C (392°F) for 10 minutes. After 10 minutes, reduce the oven temperature to 180°C (356°F) and continue baking for another 10 minutes Ganache 200 g Dark Chocolate 100 ml Heavy cream (Heated) 👉🏻 Mix the chocolate and the heated heavy cream (I just used a microwave) until smooth - fill the muffins using a piping bag + nozzle #olympics #muffins #olympicsmuffin #olympicmuffin #muffinman #chocolatemuffin #muffinrecipe
