My foolproof recipe for super easy, super satisfying chunky cookies! Crispy on the outside, gooey on the inside. Always a sure hit! 

Chunky Gooey Cookie

Ingredients
  

  • 120 g plain flour
  • 120 g bread flour
  • 1 egg
  • 1 egg yolk
  • 200 g brown sugar
  • 100 g granulated sugar
  • 150 g butter
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp Vanilla extract
  • 150 g chocolate chips
  • 100 g Walnuts

Instructions
 

  • Mix the butter, brown sugar, granulated sugar together until creamy
  • Add the egg, egg yolk, and vanilla extract to the mix
  • In a separate bowl, mix the dry ingredients together: bread flour, white flour, baking soda, baking powder, salt. Then add to the butter/sugar/egg mixture. Mix until the dough is smooth.
  • Add the chocolate chip and (pre-roasted) crushed walnuts (or any other ingredients you’d like e.g pistachio, raisins, etc). Mix until everything is well combined.
  • Scoop out the cookie dough onto a tray lined with baking paper into large dough balls (I used a large sized ice cream scoop for this)
  • Refrigerate and let the dough rest for at least 30 min. At this point you can also freeze the dough if you want to use it much later on.
  • Pre-heat the oven to 180 degrees C (I use fan mode)
  • Place the dough balls on to a lined baking tray, make sure there’s quite a lot of space between each of them (I’d say at least 8cm)
  • Bake the cookies in the oven for 14-20 minutes until they have a nice golden shine ☀️
  • Take them out of the oven and leave them to rest for at least 15mins. (Or you can be cheeky and scoop it out with a spoon at this point – they’re piping hot and super gooey right out if the oven)
  • ENJOY 🍪🥛
