Crêpes were probably one of the first thing I learned to cook when growing up. I remember going through so many trial and errors with batter being sometimes too thick, too clumpy, or too runny. Ultimately, it’s one of those dishes that remain close to my heart when growing up. I remember eating them with Nutella a lot, however the savoury pancakes were always my favourite. Here’s a quick and simple recipe for some egg, ham and cheese crêpes.

Egg, Ham & Cheese Crêpe
Ingredients
- Batter: makes 2-3 pancakes
- 1 egg
- 50 g flour
- 150 ml milk
- Butter to grease the pan
- Filling
- 1 egg
- 2 slices of ham
- 1 handful of grated cheese I used Mozzarella
- Salt and pepper to taste
- Chopped parsley for garnish
Instructions
- Prepare the batter by mixing the egg and the milk together then gradually add the flour in and mix until it’s smooth and clump free
- In a pan on medium heat, add a small slice of butter to grease the pan
- Pour some batter into the pan and gently rotate it to make sure that the batter covers the entire surface
- Add a handful of grated cheese into the middle of the pancake
- Add 2 slices of ham
- Crack an egg in the middle
- Add some salt and pepper to taste
- Once the sides are brown, fold the four sides towards the middle, leaving the egg to show
- Cover with a lid and cook for a few minutes until the egg whites become opaque
- Garnish with some parsley, then you’re ready to serve!
