Whipped this dish up using leftovers from our Korean BBQ night. One of my favourite dishes when I was in Uni. It’s super tasty and easy to make as well. You can add in some beef, bacon, tuna or cheese as toppings as you see fit!

Kimchi Fried Rice (Bokkeumbap)

Easy Kimchi fried rice (bookkeumbap) recipe

Ingredients
  

For 1 bowl of rice:

  • 1/4 Onion chopped
  • 1/2 cup Kimchi
  • 1/2 cup Kimchi juice liquid from the Kimchi
  • 1 bowl rice
  • 1 egg
  • 1 bowl of boiled rice
  • Salt & pepper to taste
  • 1 tsp Sesame oil
  • Cooking oil

Optional:

  • 1 tsp gochujang
  • 1/2 cup water
  • Any meat or fish that you would like tuna, beef, bacon
  • Sesame seeds
  • Nori flakes seaweed flakes

Instructions
 

  • Heat up a pan, and add a bit of cooking oil
  • Once than pan is hot, ddd the chopped onions and stir for a bit
  • Optional: if using any raw meat, add in at this point and give it a quick stir until cooked
  • Add the Kimchi into the pan and mix
  • Add the rice and the Kimchi juice and mix
  • Optional: if you want an extra kick or more colour to your rice, mix the gochujang and water together then pour it into the pan and give it a quick stir
  • Add the sesame oil and any salt or pepper to taste and give it a final stir
  • Fry the egg separately
  • Serve the rice by topping it with the egg, seaweed flakes, sesame seeds
  • Enjoy!
