Back in Uni, I used to live near this small family owned Chinese takeaway that served the most AMAZING salt & pepper chicken wings: it was super crispy, packed with flavours and super addictive. I’ve never been able to find any other places that lived up to those standards so decided to recreate my version at home. The best thing about this dish is that it’s not only tasty but also super easy and quick to make!
Salt & Pepper Chicken Wings
Ingredients
- 500 g chicken
- 1 tsp salt
- 1/2 tsp pepper + some more for stir fry
- 1 tbsp Shaoxing cooking wine
- 8 garlic cloves 1/2 for marinade, 1/2 for stir fry
- 2 spring onions
- 1/4 onion
- 1/2 red chilli
- 1 cup potato starch
Instructions
- Marinate the wings with salt, pepper, minced garlic and a bit of cooking wine then leave it to rest for at least half an hour
- While waiting for the meat to marinate, chop some onions and chillies
- Generously cover the wings with some potato starch, this is what’s going to make them super crispy.
- Prepare your pan for deep frying, add in some oil and once it’s bubbling, add your wings in one by one.
- Deep fry for about 7-10 minutes until they become golden
- In a separate pan, lightly stir fry the chopped chilli, the white part of the spring onions, and some extra minced garlic
- Add in the chicken, the green part of the spring onions, a bit more pepper and toss everything together until it’s well combined
