In preparation for Christmas, I’ve been testing some recipes that I can quickly whip up to bring to holiday dinner parties, including this fool proof ORANGE LOAF CAKE that’s super easy and quick to make, and no mixer required!

I made this in collaboration with Spain’s leading oil brand La Espagnola. The light in colour oil is perfect for baking. It allows the cake to get an even texture (bye bye huge air pockets!) – not to mention it contains beneficial fatty acids and antioxidants that makes it a healthier choice. The result is a super moist sponge packed full of citrusy flavour!

Orange Loaf Cake

Ingredients
  

  • Cake
  • 2 cup plain flour 300g
  • 1/2 tsp baking powder
  • 1 pinch of salt
  • 1 cup olive oil 200g
  • 1/2 cup orange juice 100ml
  • 1 cup sugar 200g
  • 3 eggs
  • Zest of 1 orange
  • 1 tbsp vanilla extract
  •  
  • Glaze
  • 1 cup icing sugar
  • Zest of 1/2 orange
  • 2 tbsp of orange juice depends on how thick you want the glazing to be

Instructions
 

  • Preheat the oven to 170 degrees C
  • In a bowl mix together the plain flour, baking powder and salt
  • In a separate bowl, mix together the olive oil, orange juice sugar, egg, vanilla extract and orange zest until it’s well combined
  • Combine the dry and wet mixture together until you get a smooth batter (try not to over mix or the 
  • Pour the batter into a greased 8”x4” loaf pan 
  • Bake in the preheated oven for 1hour – 1 hour 10 minutes. Insert a toothpick at the end to see if the batter is cooked and dried
  • Make the glaze by mixing the icing sugar, orange zest and orange juice together. Add in more / less orange juice depending on how thick you want the glazing to be
  • Optional: decorate with some dried orange slices and rose petals
